We could say a lot of things about the last year. 2020 was a time of turmoil, change, and transition — personally, and professionally – for so many. But it wasn’t all bad. 2020 also brought us back home, brought us together (even when we were apart), and showed us the courage, perseverance and kindness that has permeated our communities in the face of unprecedented challenges.
Despite the uncertainty, and the pandemic, there are still stories upon stories of people rising to the occasion – whether out of necessity, or true grit – to overcome. And here in the Capital Region alone, hundreds of them have stepped up to start new businesses of all types and sizes.

Saratoga Springs is a growing community that loves their dogs! As a pet owner of two dogs, I am often driving 15-20 minutes to pick up my dog food. There are no local establishments that sell the premium brands I am looking for. Recently, I rescued a dog that has a bit of a nervous nature. She doesn’t really trust anyone but me, so having her groomed is out of the question. I started looking for a place to take her where I could wash her myself – the only location in the vicinity was a tub in a closet of a crowded pet food store that catered to all animals. I found that I wasn’t the only one having these concerns and challenges. Upon further investigation, I found that our town has a few boarding places and groomers and daycare, but none of these places offered more than one of these options.
Enter Chow Bella! This will be a place that caters to all things dogs! The vision is a retail location that provides high quality dog foods and treats. What makes us different will be everything else! We will offer a salon style grooming facility. This will be a much needed service in our community, and for those of you who just want a place to wash your dog yourself, we will offer several Self-Washing stations! Leave the mess to us!
The thing that will definitely set us apart is the Dog Park. An indoor, climate controlled, play space for you to play with your dog! The social aspect is what I’m most looking forward to. Like-minded dog people will have a place to come and mingle – a safe place to play with your canine companion, as well as shop, learn and bathe.

“Citrus Leigh is an online original art clothing company based out of Saratoga Springs, NY. Owned & operated by two local cousins, Kacie Cotter-Sacala and Meg Edwards, Citrus Leigh began conception in November 2019 and officially launched in August 2020. Their mission: to create eco-friendly, comfortable and trendy wearable art. Their inspiration: nature, culture, an Adirondack life and a gypsy soul. All Citrus Leigh designs are created by Cotter-Sacala. Their unique apparel pieces are quality screen-printed, and their earth-friendly “swag” line of totes, koozies and scarves are all in-house printed and pressed with vinyl. From art to production to your hands, these ladies do it all themselves.
During our conception months, we gained a healthy following via social media platforms. Friends, family and our community were supportive and encouraging which boosted our “business-esteem” and thus persuaded our decision to keep moving forward after the pandemic hit. We classified COVID as just another speed bump along the road to our website launch. Since we are an online shop, our accessibility remained intact and we were fortunate to have only minor adaptations for COVID protocol. The lack of a buyer market was the threat we were facing, so we left it to faith, trust, and pixie dust.
Since our initial launch in August, we have added a scarf line, three new design collections, expanded apparel collections, and forged a brilliant relationship with local photographer Eileen Harrigan @bugeyephotography who does our lifestyle photos. We are also now in the process of having our apparel available in a few local shops, as well. We are so excited to see what 2021 will bring. When the pandemic hit, and I was home 24/7 with my boys, schooling like all of us. I would post on my social media photos and comments about my day. I did not sugar coat it, I laid it out exactly how it happened which wasn’t always pretty. After about a month or 2 of my post I received a ton of responses from parents and people in the area. They would say how my posts made them feel like they weren’t screwing it all up and that they weren’t alone. One mother reached out to me and said ‘Your post make me feel like I’m not alone, your funny honest and spot on. Please start a blog!’ So I did!
In July 2020, Fiercely Chaotic was launched! It is basically a catch all for the honest parent person who is real with themselves that life is absolutely insane and we are all just winging it. She built her Instagram account to over 30k, and everything that was listed sold out instantly.
HipsterbyMadi was a hit for many years, however the shop had to close due to the immense growth and the pure fact that a 14 year old could not manage freshman year of high school, cheerleading, friends, and everything else that comes along with the struggles of being a teen. The entrepreneurial spirit never left her, and she always made and sold clothing pieces here and there. She went off to pursue a Marketing and Entrepreneurship double major at Syracuse University.
I’m Madi, and that is the preface to the story behind MadiMade.
Fast forward a bit to March 2020, I was a college bartender who was unemployed due to COVID-19. With my internship getting delayed, I was counting pennies out of a jar to try to make bill payments. When the CDC & NYS recommended masks to be worn in public, people were scrambling to find masks. I identified a need & an opportunity. I always loved to sew & realized that I could use my skills to make masks.
At first, I made them for myself & family. The demand became greater and greater, & I decided to go open my Etsy shop. I knew I had a product that was essential. I wanted to help as many people as I could to stay safe during this pandemic.
I am so proud to announce that I am celebrating reaching 1,000+ sales! Sewing from sun up to sun down, printing & packaging orders, & endless USPS post office runs was all worth it.
Even though I question; Why did this pandemic happen? Why am I going through these challenges? I have realized something— If things were any different, I would not be in this position today.

From Leslie Swedish, Owner/CEO: “Moxxi Coffee Company was officially launched on September 1st, 2020 offering two blends of craft coffee: Bold Ambition (our Monsooned Malabar dark roast blend) and Blonde Ambition (our Third Wave-style light roast coffee blend). These two blends are locally roasted small batch and fair trade certified. I have hopes that we will expand into a specialty line of coffee in 2021 that will be organic, fair trade and with luck very different from what is currently available. We are in the testing and development phase of that endeavor and are hopeful that the processes we are testing are successful and we can bring the new product to market by Spring.
We are one of few woman-owned coffee companies in the US and I also began the Moxxi Women’s Foundation to run alongside the coffee company. $1 for every item sold is donated to the foundation and the intention is that the foundation will issue grants to ambitious women pursuing career goals. Both Moxxi Coffee and the Moxxi Women’s Foundation carry a strong message of celebrating ambitious women and the men who support and admire them. I’ve been extremely happy to see that the message is garnering support from men and women alike. As a mother of three, (two daughters and a son ranging from 19 years to 1 year old), it is extremely important for me to be an example to all of them of what it means to be a strong and ambitious woman and what it means for a man to be supportive. My two oldest are board members for the foundation as well as my husband. My husband has been my biggest supporter in life and in business no matter what career path I have been on. We are at the beginning stages of laying the groundwork for how the foundation will function and who will be eligible to receive grants. I have taken the route of ambitious women because for me this is hopefully the last of many career paths that I have chosen. Most of my other attempts were thwarted because of finances. While I was a single mother, I had to choose to do things that provided for my children, rather than push further in a profession. I hope to offer funding to women in the future so that they will not have to change course.
Prior to starting Moxxi Coffee Company, I was a hairstylist. I went out on maternity leave closing the doors of my shop in October of 2019. The intention was to build a salon on our property after the baby. Unfortunately, Covid-19 made me rethink everything. I decided not to go back into the industry right away, and instead I began to develop Moxxi Coffee. Once the company launched and I was fully invested in the company and the foundation, I made the decision to step away from hair completely. The salon we planned to build on our property – which is scheduled to break ground on Wednesday – will instead be the headquarters for Moxxi Coffee Company, as I’ve already completely outgrown the loft space I’ve been operating out of in my home.
Starting a business during a pandemic certainly came with its challenges. The biggest challenge has been production for things like packaging and single serve options. I had to launch with a stickered bag for the first several weeks because our packaging was delayed. I had a source all lined up for single serve Keurig compatible cups only to have the producer back out in the final hours because he could not handle taking us on.
We are available in several retail stores in the capital region and have a map of retailers on the website, including: Saratoga Coffee Traders, Crafters Gallery, Roma Foods in Saratoga, Candy Cottage in Latham, The Open Door Bookstore in Schenectady, and the juicin’ jar in Glens Falls to name a few. we hope to expand our wholesale program in 2021, though I think COVID will have a significant effect on how much that is possible.”

MW Farmstead’s story, as told by the owners:
“Tonia and AJ purchased their first home together in June of 2019, an early 1900’s farmhouse on the edge of the Salem Village. The small acreage property also included a large barn with old milking staunches on the first level. The dream of owning a home was a definitely long road of many ‘No’s” and hurdles to overcome, first of like many Americans who were caught up in the United States Foreclosure crisis of 2010, Tonia had lost her previous home from her first marriage to a deed in lieu foreclosure. It took a long time to rebuild her credit and living off a cash-based system only did not impress the banks, so getting a preapproval for a mortgage was nil to none. The other hurdle was AJ became suddenly and violently ill with a strange neurological condition in June of 2016, he was symptomatic of a stroke along with mental changes & hallucinations. This condition baffled AMC and it took approximately 1 month and 4 hospital admissions before the figured out his diagnosis. Autoimmune Encephalitis, where literally his own immune system was attacking his brain tissue. He had a very long road to recovery through rehabilitation, Immunoglobin therapy both as inpatient and in-home infusions where he would be hooked up to an IV for hours and healthy antibodies would be pumped into his body to replace his immune system, slowly and surely over the course of a year he was able to regain his abilities, return to work and become healthy enough to resume normalcy.
Then along comes 2020 and coronavirus resulting in many changes to their lifestyle. AJ being in the food and beverage industry as a chef at a local establishment experienced income loss with hours varying, take out only menu, then reopening happened but still operating under what the restaurant would normally do for business affects income. Tonia a NYS employee for Office of People with Developmental Disabilities was able to participate in a Pilot Telecommunicating work plan and thankfully able to still work from home and have the same income. Being home more on their dream home and property got Tonia to thinking more of what could they do with that old gorgeous barn? She approached her husband and asked “what do you say we start to renovate the lower part of the barn (old milking parlor with wooden staunches) and create a farmstead, get goats and make products to sell?” AJ really thought Tonia had lost her mind but he went along with her idea anyways and MW Farmstead was created!
Our distinguishing factors for MW Farmstead are products all natural ingredients and ethically sourced, no chemical fragrances or dyes and additives, we aim for earth conscious packaging. Our mission simply begins with our own family learning and enjoying the many blessings of living on a farm property, and then we grew to wanting to share those blessings with others. We do our very best to always apply the “Gratitude & Giving” motto to all things we do! Our goat milk soaps are by far the most popular but not far behind is our goat milk bath bombs or bath soaks all priced very reasonable. MW Farmstead raises ADGA Nigerian Dwarf goats and their herd is always growing with upcoming kidding season being highly anticipated.
The quaint Salem Village that has a historical feel to the main street shops and businesses, art galleries, SAW Salem Art Works, The Battenkill Creamery, The Salem Tavern and now MW Farmstead just to name a few things to check out in the short 30-mile drive from Saratoga via State Route 29. Upcoming events for MW Farmstead that will be worth the drive will be “Just Kidding Around” during kidding season where for a small fee you can visit the baby goats and learn all about the goats and products made on the farm. MW Farmstead is in the works of creating their website for the ease of online shopping, listing of ADGA goats available and informative blog posts with hopes to have it go live in late January/early February.
Probably the most unexpected take away from our start of the farmstead adventure was the overwhelming positive response for a demand of our products and what we were doing. Another amazing take away was how much our 5 yr old Maddox loved to be apart of this adventure and truly a big driving force behind the whole thing, literally he will wake up and be the first out to the barn to start chores, he may have had limited socializing with friends during covid-19 but he surely made new ones with the goats! Running, playing and hanging out in the barn for hours at a time. Most nights we have to force him inside as he begs “I am sleeping in the barn tonight.” The only downfall and sadness of the start of our business is we had two 10-week-old baby boy goats presumably taken from our farm one night in October and never to be found. We exhausted measures social media, doing foot searches, dog tracking searches, overhead drone searches and no signs of them turned up.
Our hope is to continue to grow MW Farmstead presence on social media, we are on Instagram, Facebook and Tik Tok, grow our venues of where our products will be such as farmers markets, Co-op stores or boutiques and grow our herd to raise healthy and loving animals. We want to support other local and small businesses and if we can source anything we need for the farm or products we will always try that first! Who knows maybe we could pair up with some local business such as RS Taylor & Sons to make a beer soap, pair up with local Saratoga gardens to source botanicals, flowers, find local health food stores to source ingredients, etc. to use in the goat milk products?

“My mother (pictured) was amazing in the kitchen. She loved being in there and her food reflected that. At an early age, she taught me fundamentals, recipes, tricks, tips, and how to respect and love cooking and baking. She was great at it, but man…was she was all over the place! For as long as I can remember, we all called her “The Swedish Chef.” It wasn’t just because she was Swedish…if anyone remembers the character from the Muppets, they’d see why it’s funny!
As she got older, her health raised some issues. At one point I was able to help her with her diet and it worked really well. However, some old habits don’t die…and she gave up on trying.
In September of 2018, she tragically passed away. In my heart, I have always felt that if she had been in better health, none of it would’ve happened.
I have always committed myself to staying healthy, but since then, the motivation is even stronger. This company is a tribute to my beautiful mother; to help people understand that you can actually have your cake and eat it too; that you can still enjoy your favorite treats!
My mother was gluten-free to begin with, but I’ve taken this to a higher level. Everything is completely grain-free. It is also sugar-free and low-carb. This kind of lifestyle has helped me tremendously not only in terms of weight, but in other health aspects as well. I have lots of energy, no more knee pains, better mental clarity, better concentration, zero mood swings…the list can go on. (Side note: Years ago my brother was diagnosed with stage 4 cancer, and the doctor advised him to cut out carbs and sugar. He did it, and beat it, and has been cancer free ever since.)
I am passionate about what I do and what I put out there. In whatever eating lifestyle you are in (paleo, keto, low-carb, diabetic…) I’m here for you! And even if you follow a traditional diet, my goodies are for you too! I’ve had people tell me that they love my bagels more than regular bagels!
