Saratoga Dry Aged Cuts Opens in Ballston Lake
Seven years ago, Kenny Wheeler and Aaron Schultz met as coworkers and became fast friends over their shared love of food. The two began a side venture dry aging beef for friends and family, and realized they had a loyal – and quickly growing – group of hungry followers. After pushing their business plan through the worst of the pandemic and securing their first brick and mortar location, meet Saratoga Dry Aged Cuts – your new “meat guys.”
“We’re a butcher shop offering the community the best product at reasonable prices,” explains Wheeler, a Ballston Spa native. “We specialize in dry aging beef which creates a unique flavor like no other when it comes to trying different steaks. We offer Beef, Poultry, Pork, Boar’s Head Deli Meat, and we also have a large selection of spices, marinades, and rubs. There is something for everyone.”
The shop – located right off of Exit 11 behind Stewart’s – is open weekdays 10AM – 6PM and weekends 10AM – 4PM. Their fresh selections are always changing, but you’ll find things like:
- Dry aged ground beef
- Marinated chicken breasts
- Specialty burgers
- Steaks: Black Angus Strip, Prime NY Strip, Prime Ribeye, Wagyu
- Marinated steak tips
- Pork chops
- Bacon-wrapped filet mignon
- Seafood specials
In addition to their meat products, they offer weekly specials, gourmet side salads, custom orders and event catering. Wheeler said they’re also going to be introducing a new menu of cold subs in the coming weeks. As for their favorite things on the menu, Kenny loves any of the dry aged meats and premium reserve pork chops. While Aaron is all about their Jack Daniels Marinated Steak Tips and Wagyu beef. Opening a new business during a pandemic presented its own set of challenges, so the pair enlisted the help of a trusted friend, Gerard Wise of Roohan Realty’s Commercial Department, to help find perfect location. “We have known each other for many years from baseball and graduating high school together,” says Wheeler. “When the time was right to start looking for a location, I reached out to Gerard to help.” The store celebrated its grand opening on August 6.
